Mad Dash: What a 300-pound, vegan NFL lineman eats

Injuries early in David Carter's NFL career were starting to weigh him down, holding him back from a dream he was committed to pursuing fully. When he found out that the consumption of dairy products could aggravate some of the tendonitis issues he kept experiencing, he decided it was time for a change, and went full vegan with his diet. It's become a total lifestyle change, one that Carter told GQ has opened his eyes. The trick, of course, was keeping his NFL weight up around 300 pounds. Initially, the diet led to Carter losing 40 pounds, but over time, he's been able to get it back up. But it's not easy, and his daily food intake shows that. This is an average day for Carter, according to GQ:

Breakfast
Oatmeal with hemp protein, bananas and berries

Snack
20 ounce smoothie made with cannellini beans, banana, strawberries, and spirulina

Lunch
Brown rice and black beans topped with avocado and cashew cheese

Snack
Another 20 ounce smoothie

Couscous with onion and garlic, and spinach salad with bell peppers

And that's after mentioning that he also snacks on probiotic sauerkraut throughout the day. We're probably going to stick to regular cheese and unlimited cookies, but if it's working for Carter, who has a pretty demanding body and career, it's definitely worth considering for hunched-over computer key clickers like us.
