Roasted Tomato Margarita
2 lbs cherry tomatoes
Olive oil (drizzle)
2 garlic cloves (minced)
2 tsp coarse sea salt
2 tsp black pepper
1 tsp chili powder (optional)
½ cup water
2 lime wedges
3 oz tequila
1 oz freshly squeezed lime juice
2 cups ice
Lime slices for garnish
Transfer the tomatoes to a baking sheet, then roast them in the oven at 350 degrees Fahrenheit for 15 minutes.
Add the tomatoes to a blender, followed by the water, and blend on high until puréed, then pour into a pitcher.
Mix the chili powder and coarse sea salt on a plate.
Add the tomato purée, tequila, lime juice, and ice to a cocktail shaker, then shake well for a few seconds.
Wipe a lime wedge on the rim of the glass, then roll the edge in the sea salt/chili powder mix. Add ice to the glass, followed by the margarita, and garnish with a lime wedge.
Spicy Cucumber Jalapeño Martini
¼ cup water
¼ cup fresh lime juice (3 limes)
½ cup sugar
¼ cup fresh cilantro whole (not chopped)
1 jalapeño pepper sliced in half lengthwise
2 large cucumbers (sliced)
1 cup Exotico Reposado tequila
½ cup triple sec
Salt and cucumber slices for garnish
Add the water, lime juice, sugar, fresh cilantro, and a halved jalapeño pepper to a small saucepan over medium-high heat and bring to a boil. Stir to make sure the sugar completely dissolves. Once boiling, reduce to a simmer and cook for 2 minutes. Discard the jalapeño and cilantro, then transfer the mixture to a small bowl and chill in the refrigerator.
Add sliced cucumbers to a blender and blend on high until puréed.
Strain the cucumber purée through a fine-mesh metal sifter, pressing down to squeeze out all the liquid.
Fill a cocktail shaker halfway with ice, then add tequila, the chilled simple syrup, triple sec, and the cucumber purée juice.
Shake well for a few seconds, then pour over ice into a glass rimmed with salt and garnish with a cucumber slice.
Passion Fruit Margarita
1.5 oz passion fruit pulp
3.5 oz tequila
1 oz Cointreau Orange Liqueur
1 oz lime juice
1.5 oz honey
Coarse sea salt
Lime wedges, mint, or basil, for garnish
Slice lime wedges to use for garnish, then set aside.
Rub a lime wedge over the rim of a glass, then roll the edge in a small bowl of coarse sea salt.
Pour the margarita over ice into the salt-rimmed glass and garnish with mint leaves, lime wedges, or basil.
