Ingredients

  • 4 eggs

  • 1 cup whole milk

  • 1 cup fresh ricotta

  • 1 tsp salt

  • ¼ tsp pepper

  • 2 tbsp parmesan, grated

  • 1 tsp Italian seasoning

  • 1 pie crust

  • 12 oz. artichoke hearts

  • 4 oz. pimento

Directions

  1. In a mixing bowl, whisk the eggs. Then add the whole milk, fresh ricotta, salt, pepper, Italian seasoning, and grated parmesan and whisk again. Set aside.

  2. Place a piece of parchment paper on your counter and roll out your pie crust on top of it. Once flat, transfer the dough to a pie dish and gently press it in.

  3. Chop up half of the artichoke hearts and add them to your liquid mixture. Then, add the pimento and mix.

  4. Pour the liquid mixture into the pie crust, and place the remaining artichoke hearts on top.

  5. Bake at 425 degrees Fahrenheit for 10 minutes, followed by 375 degrees Fahrenheit for 40 minutes.

  6. Once cooked, slice it up and enjoy!
