Making mochi from scratch is easier than it sounds

Mochi might just be the perfect bite-sized dessert! With its sweet, chewy dough exterior and ice cream-filled center, mochi is a unique treat that’s perfect for serving up at get-togethers or enjoying on your own! It’s also infinitely customizable, and can be made with everything from your favorite fruit to matcha green tea! Here are 3 delicious and surprisingly easy mochi recipes you need to try.

Ingredients:

Mango Mochi

  • 4 tbsp freeze dried mango

  • ½ cup sweet rice flour

  • 2 tbsp confectioner’s sugar

  • Pinch of salt

  • ½ cup of water

  • 2 ½ tsp corn syrup

  • Flour

  • Vanilla ice cream

Strawberry Mochi

  • 1 tbsp freeze dried strawberries

  • ½ cup sweet rice flour

  • 2 tbsp confectioner’s sugar

  • Pinch of salt

  • ½ cup of water

  • 2 ½ tsp corn syrup

  • Flour

  • Vanilla ice cream

Matcha Mochi

  • 1 tsp matcha green tea

  • ½ cup sweet rice flour

  • 2 tbsp confectioner’s sugar

  • Pinch of salt

  • ½ cup of water

  • 2 ½ tsp corn syrup

  • Flour

  • Vanilla ice cream

Directions:

  1. Blend the strawberries in a food processor and set them aside. Then, separately, blend the mango and set it aside.

  2. Grab three mixing bowls, one for each flavor of mochi. Add sweet rice flour to each bowl. Then, mix the blended strawberries, blended mangoes, and green tea powder into their respective bowls.

  3. Mix the confectioner’s sugar, salt, water, and corn syrup into each bowl. Stir the ingredients until well-combined, then cover each bowl loosely with plastic wrap.

  4. Microwave each bowl on high for 1 minute, then remove the plastic wrap.

  5. Sprinkle your work surface with flour, then scoop the dough out onto the surface, 2 tablespoons at a time. Coat each ball of dough with flour, then roll them out with a rolling pin.

  6. Add 2 tablespoons of vanilla ice cream to the center of each piece of dough, then pinch the dough closed.

  7. Freeze the mochi until firm, then serve it up!
