3 lbs chicken wings
2 tsps kosher salt
6 garlic cloves, coarsely chopped
1 2-inch piece of fresh ginger, peeled and coarsely chopped
1 cup plus 1/2 tbsp reduced-sodium soy sauce
1/4 cup gochujang (Korean hot pepper paste)
1/4 cup light brown sugar
2 tbsps fresh lemon juice
2 tbsps honey
2 tbsps rice wine
2 tbsps unseasoned rice vinegar
1 tsp freshly ground black pepper
1/4 cup flour
Scallions, sliced (for garnish)
Season chicken wings with salt, cover, and chill in the fridge for at least 8 hours and up to 1 day.
Air fry the wings in batches (about 6 at a time) at 425 degrees Fahrenheit for 25 minutes.
Bring garlic, ginger, soy sauce, gochujang, brown sugar, lemon, honey, wine, vinegar, and pepper to a boil in a medium saucepan over medium-high heat. Reduce heat, and simmer, stirring occasionally, until slightly thickened (about 5 minutes).
Add cooked wings to the pot of thickened sauce and stir to coat evenly. Transfer to a serving plate and garnish with sliced scallions.
