And Pho All Seasons nails it each time with their generous helpings of meat and egg rolls.
What it is: Vermicelli (bún) is a round rice noodle that's light to eat. It's served with meat, egg rolls, fresh veggies and a side of fish sauce (nuoc cham) that gives it flavor.
Why we like it: Axios' Linh Ta ordered the pork vermicelli (bún thit nuong) that's topped with mint, cucumber, peanuts, scallions, egg rolls and lemongrass pork. ($8.50)
The thinly-sliced pork had a sweet glaze and a little bit of a chew. The mint and cucumber added crisp freshness, while the egg rolls were a fried guilty pleasure to bite alongside the bowl. It all works together.
Don't skip the fish sauce. It gives the entire bowl, especially the noodles, a salty, umami flavor that's essential to Vietnamese dishes.
