Decent TE's are available in the 6th or 7th round - don't forget that even the best TE's are nothing more than a ok WR2/good WR3 and the TE depth is pretty decent this year (there's sleepers everywhere too).

If you could snag someone like Olsen in the 6th and still get a decent QB in the 7th then go for it, but you'd want those picks to be close together because an ordinary QB will hurt your team more than a decent WR will help it.
